Lentil and vegetable soup
Ingredients
- 7 oz red lentils
- 2½ pints water
- 2 carrots sliced
- 1 onion chopped
- 2 potatoes diced
- 1 lb chopped vegetables eg. turnip, parsnip, courgette, cauliflower, leek.
Method
Place the lentils in a large saucepan with the water and boil for 10 minutes.
Add the vegetables and bring to the boil and simmer for a further 15-20 minutes until the vegetables and lentils are soft.
Remove amount for baby before adding seasoning for the rest of the family.
Note. For a slightly more thicker consistency puree together with a slice of wholemeal bread.
