Vegetable soup
Ingredients
- 1 tablespoon olive oil
- 1 medium onion finely chopped
- 2 medium sticks celery chopped
- 2 carrots peeled and cubed
- 1 parsnip (or piece of turnip)
- 1 large potato peeled
- 1 tablespoon plain flour
- 850 ml vegetable stock
- 2 tablespoons milk
- Chopped fresh parsley to garnish (optional)
Method
Heat the oil in a large pan and add the vegetables, toss well and cook for 3-4 minutes until lightly browned.
Stir in flour and mix together well. Pour over the stock and bring to the boil. Leave to simmer for 20-30 minutes until vegetables are tender.
Taste soup and season with salt and pepper.
