Turkey burgers

Ingredients

  • 1 lb Turkey mince
  • 4 oz fresh breadcrumbs
  • 2 eggs
  • ½ onion finely chopped
  • Finely chopped fresh parsley
  • Seasoning
  • Plain flour
  • Vegetable oil for frying

Method

Mix together mince, breadcrumbs and 1 egg, seasoning (and fresh herbs if desired) so it binds well together into a ball.

Using a desertspoon spoon mixture into palm of hand and mould into burger shape. (Burgers should be roughly the same size so that they take the same time to cook). Coat with beaten egg and dip in flour.

Shallow fry burgers in a little vegetable oil on a moderate heat, turning once after a couple of minutes and placing on an oven proof dish.

Place in the oven (Gas mark 5) for 30 mins making sure that the dish is covered with foil for the remaining cooking time to avoid burgers drying out and being very rubbery.

Serve with salad, on fresh crusty rolls or with a variety of vegetables.

Other Options

Alternatively burgers could be placed on an iceberg lettuce leaf with a slice of tomato and a spoonful of mint relish on top.

Burgers can also be made into meatballs (shaping the mixture into balls rather than burgers. This could be served with a   portion of tagliatelli and home made tomato passata or pasta sauce.
