Pesto pasta salad

Ingredients

  • 4 cups uncooked spiral pasta                    
  • 1 cup basil pesto
  • 1 cup frozen peas
  • 10 oz cherry tomatoes halved
  • 1 tbspn olive oil
  • Salt and pepper
  • Fresh basil leaves chopped (optional)

Method

Cook pasta according to instructions in salted water until cooked (but still slightly firm).

Put pasta in a large bowl and mix in basil pesto.   Gently mix in cherry tomatoes, peas and fresh basil leaves and olive oil.  Season to taste.

Can be served hot or cold with a crispy salad and vegetables.

Note. Grilled bacon pieces, chopped lean ham, chicken or vegetables are other options that can be used and work well with pesto pasta.
