Fruity pancakes

Ingredients

  • 125 g self raising flour
  • 1 tablespoon (15 mls) sugar
  • 180 ml semi skimmed milk
  • 1 egg
  • 50 g fruit eg raspberries, banana, blueberries,   raisins
  • Spray oil

Method

Wash and dry fruit and chop larger pieces of fruit.

Sieve the flour into a bowl and add the sugar.

Whisk the egg and the milk.  Stir in the fruit.

Heat the frying pan and spray with a little oil.

Pour 2 tbsp of mixture for each pancake.

Cook for 2 minutes, until golden and turn over.  Cook for a further minute and serve.
