Fruity pancakes
Ingredients
- 125 g self raising flour
- 1 tablespoon (15 mls) sugar
- 180 ml semi skimmed milk
- 1 egg
- 50 g fruit eg raspberries, banana, blueberries, raisins
- Spray oil
Method
Wash and dry fruit and chop larger pieces of fruit.
Sieve the flour into a bowl and add the sugar.
Whisk the egg and the milk. Stir in the fruit.
Heat the frying pan and spray with a little oil.
Pour 2 tbsp of mixture for each pancake.
Cook for 2 minutes, until golden and turn over. Cook for a further minute and serve.
