Tomato and tarragon sausage casserole
Time in oven: 45 mins -1 Hour Serves 4
Ingredients
- 1 lb pork sausages
- 14 oz can chopped tomatoes
- 4 oz onions, chopped
- 5 oz carrots, chopped
- 1 teaspoon tarragon
- 3 tablespoons tomato sauce
- ½ pint water
- 1 veg oxo cube
Method
Pre-heat oven to 180 C/Gas mark 4.
Prick sausages with fork and put under the grill to brown on both sides.
Cut each sausage into 2 or 3 pieces.
Put tomatoes, sausages, onions, carrots, tarragon, tomato sauce, water and oxo cube in to saucepan and bring to the boil. Transfer to casserole dish, cover and place in oven.
Serve with mashed or baked potato and green salad.
