Veggie bean burgers

Ingredients

  • 3½ oz mature cheddar, grated
  • 1 bunch spring onions, shredded
  • 198g sweet corn, drained
  • 1 egg beaten
  • 2 teaspoons vegetable oil
  • 1 tablespoons plain flour
  • 15 oz potatoes cut into small cubes
  • ½ 400g can mix beans, rinsed and drained
  • Fresh breadcrumbs (2 slices of bread made into crumbs)

Method

Heat oven to 220c/200c fan/Gas 7.

Boil the potatoes in unsalted water until tender.  Drain, then mash.

Roughly mash the beans with a fork.   Mix with the mashed potato, sweet corn, half the spring onions, all the cheese and half the egg.  Season.

Toss the breadcrumbs with the oil and seasoning. Put the flour, remaining egg and crumbs onto plates.

Take ¼ of the mix, pat into a burger, then dip in the flour, egg and crumbs.

Place on a non-stick baking sheet and repeat to make 4 burgers. (The burgers can be frozen at this stage if you wish to cook at a later date).  

Bake for 15-20 minutes, and grill for 2-3 minutes until golden in colour.
