Macaroni cheese
Ingredients
- 4 oz macaroni
- 1 oz butter
- 4 oz grated cheese
- Optional – ½ teaspoon English mustard optional
For sauce:
- 4 oz margarine or butter
- Flour
- 1 litre milk
- 4 oz grated cheese
Method
In a medium sized pan plunge the macaroni into boiling water and cook (uncovered).
While the macaroni is cooking make up the sauce.
Melt the margarine or butter in a pan. Add the flour and mix in. Cook for a few minutes over gentle heat without colouring.
Remove from the heat to cool the roux. Gradually add milk, a little at a time, and stir until smooth.
Add 2 oz of grated cheese and heat until cheese has melted. Add mustard if desired and simmer for a few minutes.
When the macaroni is cooked drain in a colander and put back into the pan. Add the cheese sauce to the pasta and mix well.
Place in an earthenware dish and sprinkle with remaining cheese and place under the grill to brown.
Note. Other variations to this dish have included diced ham, sweetcorn tomatoes and mushrooms.
