Rice pudding with strawberries

Ingredients

  • 1 oz pudding rice
  • ½ pint milk
  • Pinch of nutmeg (if desired)
  • 3 fresh strawberries or other soft fruit

Method

Put rice, nutmeg and milk in a non stick pan, bring mix to the boil and turn heat down to simmer. 

Cook for 30 mins stirring frequently to prevent sticking.  Add more milk if needed a little at a time.  The pudding is ready when the milk is almost totally   absorbed.

Wash a few pieces of strawberries and place on top of the rice pudding.

The rice and fruit can be blended for a smoother, creamier dessert or left as it is for a more textured consistency.

Any extra rice pudding can be put into an ice cube tray and frozen for another time.
