Cottage Pie

Ingredients

  • 50 g  lean minced Beef
  • 25 g chopped veg (carrots, leeks, swede, celery etc in small dice)
  • ½ small onion, diced
  • 50-100g mashed potatoes (or a mix of root veg: celeriac, sweet potatoes, etc)

Method

Heat a little olive oil in a frying pan and sweat onions. Once softened and began to colour, add other veg and cook for about 5 mins until softened. Once cooked, set aside.

Brown the meat in the pan. Add the veg back into the pan and add enough water to cook.

Bring the mixture to the boil and simmer for 25 mins, adding more water if needed.

Whilst mince is cooking prepare and cook potatoes, drain and mash.

Add some corn flour and water if the mince needs to be thickened.

Puree or sieve some mashed potato and minced beef together.
