Chinese Pork

Serves 4

Ingredients

  • 500g piece Pork Fillet
  • 1 tablespoon Oil (preferably Olive or Sunflower)

For the marinade

  • 4 tablespoons Soy Sauce
  • 1 tablespoon Clear Honey
  • Finely grated zest and juice of 1 orange
  • Large knob Root Ginger, finely grated (or 1 heaped teaspoon ginger paste)

Method

Tip all marinade ingredients into a shallow dish and stir to combine.  Coat the pork in the marinade and cover with cling film.  If you have time leave to marinade 1 hour or even better overnight.  Pork may be cut into 2 or 3 even- sized pieces.

Heat oven to 200c/180c fan oven/ gas mark 6. 

Heat oil in large based pan, take pork out of marinade and place in heated oil. Brown on all sides, then pour over rest of marinade allow marinade to reach simmer then transfer pork and marinade to roasting tin. Roast pork in oven for 30 mins until cooked all way through, basting with juices 2 or 3 times.

Remove from marinade, slice the pork thickly, serve with boiled rice and steamed or stir fried “greens”. (A mixture of finely sliced green cabbage, sliced leek and spring onions, stir fried with a little garlic works well).

Note. Marinade would work well with other pork chops/ pork loin or chicken
