Toad-in-the-hole

Ingredients

  • 4 oz (120 g) plain white flour
  • ½ teaspoon salt
  • 1 egg
  • ½ pint skimmed milk
  • 1 lb pork or beef sausages from a butcher or vegetarian sausages
  • 2 tablespoons vegetable oil

Method

Preheat the oven to gas mark 7 / 210ºC / 425ºF.

Beat together the flour, salt, egg and milk in a large bowl, using a wire whisk or hand held electric beater.   Allow to stand for 10-15 minutes.

Preheat the grill and place the sausages on the grill rack and cook, turning frequently, for about 10 minutes until the fat stops dripping.  (Vegetarian sausages should be grilled very lightly).  

Heat the oil in a non-stick roasting pan until very hot.   Put the sausages into the roasting pan and pour the batter over.

Cook for 25-30 minutes until puffy and golden brown.  Serve with gravy, new potatoes and seasonal vegetables.
