{"id":594,"date":"2020-03-03T15:02:48","date_gmt":"2020-03-03T15:02:48","guid":{"rendered":"https:\/\/www.healthyhebrideankids.scot.nhs.uk\/?page_id=594"},"modified":"2020-03-03T15:55:17","modified_gmt":"2020-03-03T15:55:17","slug":"recipe-veggie-bean-burgers","status":"publish","type":"page","link":"https:\/\/www.healthyhebrideankids.scot.nhs.uk\/?page_id=594","title":{"rendered":"Recipe &#8211; Veggie Bean Burgers"},"content":{"rendered":"\n<h2 class=\"has-luminous-vivid-orange-color has-text-color wp-block-heading\">Veggie bean burgers<\/h2>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>3\u00bd oz mature cheddar, grated<\/li><li>1 bunch spring onions, shredded<\/li><li>198g sweet corn, drained<\/li><li>1 egg beaten<\/li><li>2 teaspoons vegetable oil<\/li><li>1 tablespoons plain flour<\/li><li>15 oz potatoes cut into small cubes<\/li><li>\u00bd 400g can mix beans, rinsed and drained<\/li><li>Fresh breadcrumbs (2 slices of bread made into crumbs)<\/li><\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<p>Heat oven to 220c\/200c fan\/Gas 7. <\/p>\n\n\n\n<p>Boil the potatoes in unsalted water until tender.&nbsp; Drain, then mash.<\/p>\n\n\n\n<p>Roughly mash the beans with a fork.&nbsp;&nbsp; Mix with the mashed potato, sweet corn, half the spring onions, all the cheese and half the egg.&nbsp; Season.<\/p>\n\n\n\n<p>Toss the breadcrumbs with the oil and seasoning.  Put the flour, remaining egg and crumbs onto plates.<\/p>\n\n\n\n<p>Take \u00bc of the mix, pat into a burger, then dip in the flour, egg and crumbs.<\/p>\n\n\n\n<p>Place on a non-stick baking sheet and repeat to make 4 burgers.
