{"id":581,"date":"2020-03-03T14:49:50","date_gmt":"2020-03-03T14:49:50","guid":{"rendered":"https:\/\/www.healthyhebrideankids.scot.nhs.uk\/?page_id=581"},"modified":"2020-03-03T15:41:21","modified_gmt":"2020-03-03T15:41:21","slug":"recipe-minestrone-soup","status":"publish","type":"page","link":"https:\/\/www.healthyhebrideankids.scot.nhs.uk\/?page_id=581","title":{"rendered":"Recipe &#8211; Minestrone Soup"},"content":{"rendered":"\n<h2 class=\"has-luminous-vivid-orange-color has-text-color wp-block-heading\">Minestrone soup<\/h2>\n\n\n\n<p class=\"has-text-align-right\"><strong>Serves 4<\/strong><\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>12 oz mixed vegetables &#8211; onion, leek, celery, carrot, turnip, cabbage<\/li><li>4oz tomatoes skinned, deseeded and diced<\/li><li>2 oz margarine or vegetable oil<\/li><li>1\u00bd pint water<\/li><li>1 oz peas<\/li><li>1 oz French beans<\/li><li>1 oz spaghetti<\/li><li>2 oz potatoes<\/li><li>1 tablespoon tomato puree<\/li><li>chopped parsley<\/li><li>1 clove garlic<\/li><\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<p>Prepare the mixed vegetables and dice.  Cook slowly (without colour) in the margarine or oil in the pan with the lid on.<\/p>\n\n\n\n<p>Add boiling water and simmer for 20 minutes.<\/p>\n\n\n\n<p>Add the peas and beans which should be cut into diamond shapes and simmer for 10 minutes. Add the spaghetti which should be cut in 1 \u201c lengths.<\/p>\n\n\n\n<p>Cut the potato and dice and add to the pan with the tomato puree and tomatoes. Simmer until vegetables are all cooked.
